Hairy Melon with Dried Prawns and Glass Noodles - Old Cantonese Recipe

Coming from a Cantonese home, stir frying and quick dishes with a combination of fried seafood, fermented or preserved vegetables are common. 

Here, the combination of stir frying and some steaming get the melon on a firm, not hard texture. It also absorb the soy sauce and the essence from the fried prawns. The glass noodles will give it an elastic and stretchy feel. Besides, it's a good accompaniment to the savoury dried prawns.  



Ingredients

Garlic chopped, 5 to 6 cloves

Soy sauce, drizzle 2,3 shakes

Dried Prawns,½ rice bowl, soaked in water for an hour or two

Glass noodles, 2 small cakes or preferred amount, soaked in water for 30mins 

One Hairy Melon (mou kwa or chit kwa), halved, desseded and cut into ½cm slices

Preparations

1) Add a few tbsp of oil into pan/wok

2) Drop the garlic in and fry till fragrant

3) Add the soaked dried prawns, save the water. Fry till the dried prawns dance in the wok

4) Then add the slices hairy melon into the wok. Add soy sauce. Stir fry thoroughly. Add the dry shrimp water and cover and let it cooked for a few minutes

5) Finally add the glass noodles and fry till noodles is done. A minute may be sufficient. Check if its aldente. Do not to let it gather and stick together

6) Plate and eat it hot
