The amicable and sociable boss greets customers and bids them well when he has downtime. Generally, the place is packed. We were fortunate to get a spot right in front of the shop. It was the lunch crowd, not forbidding as yet because the waiting staff was eager to help and get our orders going.
We had knuckle, half-fat half-lean, small bone and dry clay pot. Service was quick as expected in BKT shops as they are dealing with cooked food.
The meat was done just right, sturdy with some give. The rind was gelatinous without being tough, as the tough hide was boiled down. The fat was firm without being queasy and oily. The lean meat was firm but not hard or chewy. And the tendons were a feast, soften for the palate to be enjoyed.
The soup was out of this world. It should be the best in Klang. Thick ('nung' in Chinese) and with a layer of gelatin, it deposited into my mouth a feel-good layer of flavours from the herbs and meat that were dissolved in the gelatin.
