Easy Hosting and Homecooking Adventures - Grilled Salad, Pan-fried Mullet and Black Pomfret and IKEA meat balls

I entertain once a while at home. Having a big oven is a big plus when there is a group of 8 and above. The dynamics of cooking change as it is no longer a family meal. Better planning and also contingencies have to be considered.

So I got to think big. This big plate of grilled salad can be readied and slid into the oven when the guests arrived. Just about 6-10 minutes will suffice.

Ingredients: 
Sauce/marinate - generous amount olive oil, balsamic vinegar, chopped garlic and shallots, salt and pepper.

Greens: Portobello mushrooms, cherry tomatoes, traffic junction bell-peppers and whatever you fancy. Make sure it is colourful and attractive when you plan your purchase.

Instructions: Cut greens into size desired and sauced them with the marinade and leave for an hour or more in the fridge. Take it out half and hour before putting it into the oven. 

Then I have pan-fried mullet (belanak) and black pomfret (bawal hitam). Make sure the pan is very hot and fried each side between 6-10 minutes.

IKEA meatball at the ready (in the freezer) just in case of big eaters or more guests than anticipated present themselves at your dining table. This is Asia and 100% a possibility. Use lots of tomato sauce and cheese and put them in a sauce pan and cooked till inside meatballs is hot. In a jiffy you will have some nice and filling food.
Cut chilies in soy sauce for the fishes! Super important and much better than bottled sauces.
